Sweet & Sour CollageHere’s my recipe for this delicious dish –

  1. get some pork leg chops and cut all the fat and bones off. Cut the remaining meat into bite-sized pieces and season with braai spice (save the fat for later or to give to the dogs!)
  2. make a batter of flour, water and egg – get the consistency quite thick so it sticks to the pieces of meat and doesn’t drop off leaving it naked!
  3. in the meantime, put a small saucepan on the stove, with about 50mm of oil and let it get “bliksems” hot, but not smoking!
  4. tip all the pork into the batter, ready to cook and test the oil with one piece to see how it cooks – it should bubble and fry quite quickly – if it does this, put a few other pieces in the oil but don’t put in too many as this will cool…
