- get some pork leg chops and cut all the fat and bones off. Cut the remaining meat into bite-sized pieces and season with braai spice (save the fat for later or to give to the dogs!)
- make a batter of flour, water and egg – get the consistency quite thick so it sticks to the pieces of meat and doesn’t drop off leaving it naked!
- in the meantime, put a small saucepan on the stove, with about 50mm of oil and let it get “bliksems” hot, but not smoking!
- tip all the pork into the batter, ready to cook and test the oil with one piece to see how it cooks – it should bubble and fry quite quickly – if it does this, put a few other pieces in the oil but don’t put in too many as this will cool…
